That image backfired as a defense because it didn't work. His purpose of using that characterization was to make the jury think that Jefferson wasn't smart enough to kill them people. He couldn't possibly be that intelligent to commit that crime. The remark affected Miss Emma because she know she didn't raise a hog. One thing she didn't want is for a hog to go to that chair. She wanted a man to go, the man that she raised. Tante Lou knows how much this hurts Miss Emma so she'll try to do anything she can to help. Miss Emma won't bring Jefferson corn because  she doesn't look at him as a hog. She knows he's a man, she just wants him to believe it.
